Stuffed Jalapeno Popper Chicken Bombs

That makes this the recipe for you! It’s the best of all worlds! Stuffed chicken breast, jalapeno poppers, bacon wrapped, and grilled too! So good you won’t want chicken another way after this!
It’s fun, flavorful, and sure to wow a crowd! Doesn’t take too much effort to prepare and tastes delightful too! The whole family will love it!
What You Will Need:
Head off to your local grocery store and grab some chicken breasts, jalapenos, cream cheese and bacon. That’s it! hats the main dish.
Sides are a different story. Try some fantastic pasta salad to go with this on, or some roasted asparagus, or some potato salad. Pretty much any barbecue side will go great.
Don’t forget the materials. You will need a small sharp knife, and possible some toothpicks. And the grill!
Getting Jalapeno Popper Chicken Bombs Ready:
Start off by cutting an opening deep into each chicken breast. You are trying to make a pocket that will hold a jalapeno popper. Set these aside for a bit.
Next, cut the jalapenos in half, and remove the seeds. Fill these with cream cheese and top with a liberal amount of shredded cheddar cheese.
Stuff the cheese filled and topped jalapeno halves into the pocket you made in the chicken breasts. finally, wrap each chicken breast with bacon. Secure with toothpicks if needed.
Cooking the Deliciousness:
You can grill these on the barbecue or bake them in the oven.
Grill them on an upper level on low for about 30 minutes or bake them at 350 degrees for 45 minutes. You want to make sure that the chicken gets completely done, but that the bacon does not overcook.
To ensure that the jalapeno gets cooked enough to while melting the cheese, a lower heat is needed. The trick is to get all of the melty goodness, fully cooked chicken and not get over done bacon. It takes some practice for sure.
The result is pure deliciousness! It is heaven on a plate! The kids love it, the adults love it, the dogs wait for crumbs.

If you manage to save a portion for tomorrows lunch, that’s fantastic! I do try to make an extra for future planning.
I dish up the main, sides and everything into a bowl with a lid for tomorrow. Pop it in the fridge and warm it up later.
Easy peezy, air-tight container, in the fridge. Great leftovers. Simply pull one out and microwave for about two minutes to rewarm and you will be in tasty heaven again!
