Zuppa Toscana: Quick, Delicious Recipe!

If quick and delicious Zuppa Toscana is what you are looking for, then look no farther. This became a favorite recipe the first time I made it. The popularity of this soup in our house gets it made at least six times a year.

Easy to alter from the original to make it low carb, low fat, all organic, or anything else you need. This soup is versatile and delicious all year long. For the price of dining out, you can make an entire batch of this soup to enjoy for a few days.

One of the best parts of this recipe is it is easy on a budget too. These ingredients can be picked up for around 10-15 dollars. That’s what I call a bargain!

Essential Ingredients

Italian sausage is the star of this show. You can choose medium or spicy depending on your taste. Go ahead and grab the bulk sausage to avoid removing the casings.

Fresh vegetables are some potatoes, onion, garlic, and kale. Dice up the onion and mince the garlic. Peel and cut the potatoes into bite sized pieces. The kale will need to be chopped as well taking care to remove the tougher stems.

Fresh cream is a must for this recipe as well. Make sure to get the heavy whipping cream as it gives depth and heartiness to this recipe. Chicken broth of any kind will work here but I always reach for the Better than Bullion base for any soup I make. This base just has better flavor and less saltiness than canned broths or bullion.

Making Quick and Delicious Zuppa Toscana

Just like the recipe says, it’s quick to make!

Simply brown your Italian sausage and remove it from the pan. Use the drippings from the meat to saute your onions and garlic with your red pepper flakes.

Stir in your chicken broth and potatoes. Then, allow potatoes to cook for about 15-20 minutes until they are tender. Stir in the sausage, kale, and cream. Allow the kale to wilt and the sausage to reheat.

You are ready to dine on some delicious soup in under 30 minutes. It’s so much faster than getting ready to go out and at a fraction of the cost! My favorite kind of meal!

If you Made Some Extra

There is absolutely nothing wrong with a little leftovers. I love having this soup for lunch the next day.

Store your Zuppa Toscana in airtight containers in the refrigerator for up to three days. This soup is best re-heated in a pan on the stove. Microwave heating is accomplished in just a couple of minutes, for a great lunch.

  1. Brown Italian Sausage in heavy skillet over medium heat. Remove and set aside.
  2. Brown onion, garlic, and red pepper flakes in drippings until soft.
  3. Add chicken broth and potatoes. Bring to boil, reduce heat and simmer until potatoes are soft, about 20 minutes.
  4. Mix in heavy cream, cooked sausage, and kale. Cook until kale is wilted, and sausage is warmed through.
  5. Serve with toasted bread and a sprinkling of Parmesan cheese on top.
