Amazing Crockpot Posole

You can’t go wrong with crockpot meals. They can be either a main dish, or a full meal, or even some great sides for large gatherings. They are easy to make and practically cook themselves. That is the beauty of using a slow cooker.

Posole is one of those amazing dishes that never turns out bad. Here, we all like to try different foods, and this one did not disappoint! Full of flavor, hearty, and filling, simply a wonderful recipe to add to your collection.

Posole Basics

Posole, or pozole is a traditional dish that comes from Mexico and surrounding countries. Traditionally it is a hominy stew, but is usually made with pork, and sometimes chicken. It can be an everyday meal or served for those special occasions.

This wonderful stew is usually served with fresh vegetables as a garnish such as radishes, onions, shredded cabbage, avocado, and chili peppers. Add in a squirt of fresh squeezed lime and you are ready to indulge.

The center ingredient here is not the meat, but rather the hominy. Hominy is made from dried corn kernels that have been treated with an alkali. Dried corn is soaked in a dilute solution of lye called nixtamalization that loosens the hulls and softens the corn. It can be eaten in this softened form, or re-dried and ground into grits or masa for tortillas and tamales.

Nope, not here, we don’t usually have any when I make this. The kids love it, and I tend to luck out and make it when there are friends over to eat it all. That means I don’t get lunch for the next day, but its just fine my me.

If you manage to have some left after dinner, it will store in the refrigerator for about a week. You can also transfer it to freezer containers or bags to be frozen for up to three months.

I think I might just add this recipe to my next meal prep agenda to be able to have a few single serving lunches stashed for the future. It would be a welcome addition to my monthly meal planning for this purpose.

  1. Place Chipotle Peppers and water in blender. Puree until smooth, pour into slow cooker.
  2. Add pork, chicken, hominy, green chilies, onion, garlic, and chicken stock.
  3. Season with oregano, cumin, pepper, and bay leaf.
  4. Cover and cook on low power for 6-7 hours until meats are tender. Lightly shred meats and remove bay leaf before serving.
