Hearty Vegetable Beef Soup

Who doesn’t love a nice warm bowl of hearty vegetable beef soup on a cold winter day? I look out at a gloomy sky and automatically think of soups and stews. It just makes the house feel cozier on a cold gloomy day to simmer a nice, good soup all day long.

This one is definitely one of my favorites. I make it in spite of my picky eater who doesn’t like beef in soup. There really is nothing like a big bowl of steamy soup with some buttered bread watching the rain or snow come down.

This particular one is super easy because it is done in the crock pot. How did we ever live and cook without these things? Just prep your vegetables, set it, and continue on with your day while your house fills with amazing aromas.

Getting Set Up

Begin by chopping all of your vegetables into bite sized pieces. Add these to the crock pot while you prep the rest. Next, cut your beef into bite sized pieces and dip in flour, then brown it in a skillet with two tablespoons of vegetable oil.

Add the beef to the crock pot, cover with beef broth. For me, I add water and a nice sized spoon full of better than bullion paste. Don’t forget to add your tablespoon of tomato paste and salt and pepper.

Simple cover the crock pot and set it to low for 8-10 hours. It won’t take long before you are smelling the delicious aromas of this soup and wishing for it to be done faster.

  1. Season beef with black pepper and coat in flour.
  2. Brown beef in skillet with 2 Tbsp vegetable oil.
  3. Place onions, potatoes, carrots, celery, garlic, and thyme into crockpot, top with beef. Add any additional vegetables chosen.
  4. Mix tomato paste into 1 cup broth. Add all broth to crockpot.
  5. Cover and cook on Low Power for 8-10 hours or until done.
  6. Serve garnished with sliced green onions.

Serving Suggestions

You could go for the traditional soup and crackers here, and there’s nothing wrong with that. I learned a long time ago that spreading a little butter on those crackers first just adds a special richness. I also like to lightly grill some buttered sourdough in a skillet to use for dipping.
