Garlic Grilled Artichokes

These are the best garlic grilled artichokes ever! You pretty much can’t go wrong when it comes to artichokes, they are healthy and delicious any way you cook them. Did I mention that this is one of the absolute best ways to enjoy these treasures?

Artichokes are funny food. Some people love them, and others think they are too much work. My whole family absolutely goes nuts when I bring home artichokes from the store. They can’t wait to see what creative way I’m going to cook them each time.

Boiled, stuffed, grilled, baked, marinated…. they are so good no matter how you prepare them. Grilled is currently the favorite way to do it. Especially with a nice tangy Aioli sauce to dip the tender leaves into. Go ahead and give this one a try, you will fall in love with these artichokes too!

Grilling Some Artichokes

These are not only tasty, but they are easy too! Start by picking out some nice green, firm artichokes. Make sure they squeak a bit when you give them a squeeze, which means they are fresh. The fresher the better, I think!

Trim off the thorns on the tips of the leaves, remove the stems, and cut them in half. Boil them for about 20 minutes. Don’t overdo it, you will finish cooking them on the grill, so you don’t want them fully done and soft. Remove the artichokes from the water and place cut side down on a clean towel so they can drain.

Mix 2 tablespoons (about four cloves) of minced garlic into 1/4 cup extra virgin olive oil. Grab those drained artichokes and flip them over so the cut side is up. Brush or spoon your garlic and oil mixture onto each one to coat them. Let the oil and garlic seep down between the leaves and really soak in. I like to go ahead and push those garlic bits down in the leaves too.

Now, I hope you saved some room on the grill next to your main dish. Place your artichokes cut side down on the grill and let them develop those great grill marks. Flip them every so often to cook both sides evenly. You will know they are done when those tougher outer leaves pull off easily, in about 15-20 minutes.

Remove these beauties from the grill and enjoy with melted butter or some tangy garlic lemon aioli dipping sauce. Easy, tasty, and healthy! You will want to make these again and again and again!

  4. Brush artichokes with garlic oil, let garlic and oil seep into leaves.
  5. Grill over medium heat for 20 minutes, turning often.
  6. Serve warm with your favorite dipping sauce.

Notes

  • Pairs great with Greek Chicken hot off the grill! Serve with garlic lemon aioli sauce.
