Slow Cooker Poblano Chicken
This slow cooker poblano chicken is to die for! So easy to make, so delicious when it’s all done. My daughter asks specifically for this on all the time. She absolutely loves it, and so do all the boys.
Easy to toss everything into the crockpot and then just go about your day. Stir it all up when the chicken is done and eat a fabulous meal. In a bowl with rice, in a burrito, either way, it’s delicious.
I’m not usually a fan of chicken from a crock pot, but this one is different. To me, the chicken turns out a bit dry in most cases. I guess it’s the sauce that goes into this that keeps it juicy and moist. It’s a wonderful one dish meal, great for those busy days.
What You’re Gonna Need:
Start off with three to four nice sized chicken breasts, usually about a pound and a half to two pounds. I have used chicken thighs instead and those work well too. Grab a jar of some Salsa Verde or make your own. Chop up half an onion and three or four garlic cloves.
Layer the chicken, onion, and garlic in the bottom of the crockpot, pour the Salsa Verde on top. Next lay three or four fresh Poblano Chilies on top. Cover, set on low and let it cook for 6 hours.
Once the chicken is done, remove the chilies and set them aside. Shred up the chicken and mix well with the cooked onions and garlic. Add in 4 ounces of sour cream to the crock pot to finish off the sauce.
Now it’s time to peel those chilies you removed a minute ago. They should peel pretty easy at this point. Remove all of the tough outer skins and all of the seeds from inside. Cut into strips and mix back into the crock pot.
Serve up these yummy burrito bowls with some rice and top it with cheese. Go ahead and make it into a burrito too! Take it one more step and fry up some chicken and rice chimichangas!

- Place Chicken, onion, garlic, Salsa Verde, and Poblano Peppers into crock pot.
- Cook on low heat for six hours or until chicken is cooked thoroughly.
- Remove peppers, peel and de-seed them. Cut into strips.
- Mix in sour cream and cut peppers.
- Serve with rice.

- Delicious easy leave it all day dinner for the family! The kids love it and it’s cheap and healthy.
