  3. Melt 3 Tbsp butter in large skillet. Add 3 Tbsp flour and mix into smooth rue.
  4. Slowly add in 2 cups milk. Continuously stir for even incorporation. Bring to a slight boil to thicken.
  5. Add in diced onion and spices. Stir well.
  6. Remove from heat. Add in Cheddar cheese and stir until melted and evenly mixed.
  7. Pour cheese sauce over potatoes. Mix well to cover all potatoes with cheese.
  8. Top with more Cheddar cheese or Gruyere. Cover with foil.
  9. Bake at 350 F for 60 minutes.
  10. Remove foil and check firmness of potatoes.
  11. Return to oven to cook for about 20-30 minutes more.
  12. Allow to slightly cool before serving.
