Spinach Artichoke Dip Pasta Salad

This spinach artichoke pasta salad tastes just like the dip we all know and love. Making it this way, you get a delicious side dish for any meal and not just an appetizer at get togethers.

If you love spinach dip, you will love this recipe! I love it, my kids love it, my friends and family love it too! This one is sure a crowd favorite that leaves no leftovers!

Making This Pasta Salad

As with all pasta salads, you want to start with a good hearty pasta. The shape doesn’t matter too much as long as it will hold onto the dressing. I like to use a fun shape of pasta in all my salads like cavatappi or gemelli. Standard farfalle or penne or elbow will work just fine too. As long as it’s a hearty type, any pasta will be delicious in this dish.

The remaining ingredients are Knorr Vegetable soup mix, 1 cup sour cream, 1 cup mayonnaise, 1 small jar of artichoke hearts in water and 10 ounces fresh spinach. Optionally you may add in a can of chopped water chestnuts and a topping of fresh shredded Parmesan cheese.

Begin by cooking the pasta to a nice al dente. Just as the pasta gets done, add the fresh spinach to the hot water and stir to wilt the spinach. Drain and rinse the pasta and spinach.

Combine the mayo, sour cream, Vegetable soup packet, chopped artichokes and optional ingredients in a bowl. Once pasta is cooked, mix the dressing into the pasta, and mix well. Add salt and pepper to taste. Store in refrigerator for an hour or two before serving.

Saving Some For Later

This dish is so you won’t have leftovers unless you make a double batch! In the event that you can enjoy some the nest day, simply put it in an air-tight container and store in the refrigerator. It will keep for several days and still be delicious.

This spinach artichoke pasta salad can even be made in advance of a family picnic. Just remember to keep it chilled for the best flavor.
