Amazing French Onion Pork Loin in the Crockpot

This French onion pork tenderloin cooked in a crock pot is one of the easiest, tastiest things you can make for a week night dinner! Super easy, tastes great, and is super filling. Served with fresh veggies and hearty mashed potatoes. You just can’t go wrong here!

Crock pot cooking is the absolute best way to get a home cooked meal while working all day too! Especially if you can set it up and time it to start cooking later Ingredients:

You will need a pork tenderloin roast about 3 pounds. Some Knorr French Onion Soup Mix, 2 medium sized onions, 2 cups of Gruyere cheese and some seasonings.

These come together in a melt in your mouth goodness that can’t be beat! Served with mashed potatoes, it really is like heaven. Especially when those drippings are turned into a nice rich gravy.

You can of course sub in some mashed cauliflower for those low carb diets. I think the gravy goes well on cauliflower, it is still scrumptious!

Preparing French Onion Pork Tenderloin:

Thinly slice your onions and saute until browned and soft in butter. Cover and set aside.

Lay the pork tenderloin flat on a cutting board. With a large knife, make a cut about a third of the way up from the bottom, but don’t cut all the way through. Open up the pork loin like a book and make a second cut into the thicker half, again not all the way through.

You can now open the meat out flat and cover with plastic wrap. Pound it to an even thickness. Season the pork with Italian seasoning, salt and pepper.

Layer on about half of the caramelized onions, and half of the cheese. Roll the loin up and secure with twine. Brown it on all sides in the same skillet you cooked the onions in.

Transfer the pork to the crockpot and cook on high for three hours. Be sure the internal temp reaches 145, then top the roast with the remaining onions and cheese. Allow it to rest while the cheese melts. Thicken the drippings in the skillet with some corn starch to make a delicious gravy while the pork is baking.

Serving Suggestions:

Mashed potatoes! They are delicious with this gravy and pair excellently with the pork. Low carb alternatives are available, but you can splurge just this once, right?

I love fresh steamed vegetables. Anything green will accent this plate nicely. Broccoli, asparagus, Brussels sprouts, anything really.

What to do with Leftovers

If you happen to have remaining portions, they make great lunch for the week. Just pack them up in airtight containers and store in the refrigerator for up to three days.

I enjoy putting this into my lunch box and taking it to work the next day. I might make it for the next pot luck we do even.

  1. Melt butter in oven safe skillet
  2. Saute onions until browned and tender. Transfer to bowl, keep warm.
  3. Butterfly the pork loin. Carefully make a cut into the meat about 1/3 of the way from the bottom. Stop one inch from opposite side. Do not cut through!
  4. Open the pork loin. Make a second cut horizontal to the first. Again, do not cut through. Open the pork loin out flat.
  5. Cover with plastic wrap and pound to even thickness of about 1/2-1/3-inch thickness.
  6. Combine oil, salt, pepper, Italian seasoning in small bowl. Rub on both sides of pork loin.
  7. Cover seasoned pork loin with 1/2 onions and cheese.
  8. Tightly roll pork loin to encase the filling. Secure with cooking twine.
  9. Sear pork loin in the same skillet onions were browned in. Sear on all sides.
  10. Transfer to crock-pot.
  11. Simmer on low with 2 cups water and beef base. Cook 4 hours.
  12. Remove pork loin and top with remaining onions and cheese.
  13. Thicken juices into a gravy using cornstarch mixture of 1 Tbsp cornstarch and 1 cup water.
  14. Serve with mashed potatoes and fresh steamed vegetable.
