Simple Turmeric Rice

You can’t go wrong with this simple turmeric rice in the rice cooker when you need a tasty side dish. Give a Mediterranean spin to any meal. Absolutely dresses up plain withe rice for a refreshing change in the routine.

Sometimes I get on an ethnic kick and try to find main dishes and side dishes that tall hail from the same region. This turmeric rice makes a great addition to anything Mediterranean based or even Indian dishes. Pretty much any cuisine that uses turmeric for one of their main spices will go well with this rice.

To make it even better, I cooked in in the rice maker! This was to save those all-important stove burners for other things. It was so easy to make that way, almost completely hands off for a delightful, flavorful side dish.

Making Turmeric Rice

You could do this on the stove, but you can absolutely do it in a rice cooker too! I simply sauteed up my garlic and onion in a skillet. Then I added them with the water, rice, and spices to the rice cooker. Then “set it, and forget it”

Get started by adding one cup of Basmati rice and 1 3/4 cups water to the rice cooker. Next, dice up your 1/4 cup onion and 2 cloves garlic, saute them in 1 tbs butter in a skillet. Add these to the rice cooker along with one bay leaf, 1/4 tsp kosher salt, 1 tbsp better than bullion chicken base, and 1/2 tsp Turmeric powder.

While I do prefer the flavor of the better than bullion chicken base, I do realize it is loaded with salt. Feel free to substitute 1 3/4 low sodium chicken broth for the water and chicken base to make this a low sodium recipe.

Set the rice cooker to “white rice” and go about preparing the rest of your meal. Once the rice is finished, you simply stir, serve, and enjoy.

To make this on the stove top, you just bring the water to a boil, add the rice and other ingredients. Then lower the temperature to low, cover and let cook for about 15-20 minutes. Stove top rice is not hard, but the rice cookers take the guess work out of it making it perfect every time.

  1. Saute 1/4 cup onion and 2 minced garlic cloves in 1 tbsp butter.
  2. Add 1 cup Basmati rice and 1 3/4 cup water to rice cooker.
  3. Add sauteed onion, garlic, bay leaf, turmeric, and chicken base to rice cooker.
  4. Cook rice using white rice function on rice cooker.
  5. Serve warm as a great side dish.

Notes

  • Serves well with Greek Chicken or Indian Curry.
