The Best Potato Salad

My Grandma made the best potato salad, and so did my Mom. Now, I get to be the one who makes the best potato salad. I am so grateful that those ladies taught me how to make this!

There are dozens of variations when it comes to potato salad. Homemade is definitely better than store bought any day. You get to control the ingredients and do it just how you like it.

This potato salad is my go to when we are going camping, having a barbecue with friends, or just making ribs. The kids love it and so do their friends, you can thank one of those friends for asking me to put it on here.

How to Make Potato Salad

I make this take all day because I take my time making sure it’s right.

Start by cooking your potatoes. You can peel and cut them if you wish, but I just rinse them and put them in the pan whole. Bring them to a boil and let them cook until fork tender and skins are beginning to split.

I used to cut them firsts but found that the salad often came out mushy when I did this. It was someone who worked as a cook that told me about boiling them whole, and I’ve never gone back. It is faster to make the salad when you peel and cut them first.

Pull the potatoes out of the pan with tongs and spread them out on a towel to cool. When you can comfortably handle them, scrape the skins off with a butter knife and cut into bite sized pieces.

All that is left now is to add the rest of the ingredients and mix. Make sure you put it in the fridge, so it is nice and chilled when your guests arrive.

  2. Mix all ingredients. Start with 1 cup of mayonnaise, add more to taste and to make it creamier.
  3. Chill for one hour before serving.
